Are you planning to enjoy a taco tomorrow – since October 4th is National Taco Day?

The taco has become ubiquitous (found everywhere) throughout much of the USA. The University of Kentucky even features a taco literacy class .

My favorite taco recipe is that of a taco salad. The splurge version starts with a sprouted corn tortilla. Place the heated, puffy tortilla into a 2 quart salad bowl and add 1/2 15 oz. can of organic black beans warmed and spiced with ground cumin and Mrs. Dash Onion and Herb salt-free seasoning blend. Then pile on pre-washed mixed salad greens, chopped red or green cabbage, sliced red onion, tomatoes, avocado, a few olive bits and handful of fresh cilantro. Final touch is a drizzle of “lite” ranch dressing. Total meal under 400 calories. Flavor…Fantástico. WF!
