TRAVELING TONGUE – Vitality Tip #35

While waiting last night at Phoenix Sky Harbor International Airport’s Terminal 4, my tongue discovered what it thought was a delightful combination of the basic-four taste sensations – Sweet, Sour, Salty and Bitter – in the Tuscan Kale Salad* offered at Nocawich eatery.

Google informed me, though, that research has replaced the basic four with five (and maybe more) basic tastes. Now the Japanese originated umami (savory) and possibly the taste of fat are counted among the tongue’s taste receptors.

The lesson? Creative recipes and nature’s bounty provide healthy, previously undefined bursts of joy when we least expect them. WF!
