SUMMER COMFORT

Yesterday was one of those sizzling summer days – this one with a mild dash of Southern California humidity.

Since my home is about a mile from the beach, air conditioning is a non-option for my residence. However, on this sweltering day, none of the standard dinner options beckoned to my taste buds.

Fruit and multi-grain cereal for No-Work Summer Dinner

Breakfast had been one of those Sunday eat-out, Southern California robust veggie, light on the cheese, egg white omelets with sliced tomatoes instead of hash browns. I even indulged in half a piece of whole wheat toast drizzled with maple syrup!

Then there was an 80 calorie Mozzarella cheese stick at around 3:00 p.m. with a couple saved orange segments.

Now it was 6:00 p.m., hot and I did not want a dishes kitchen mess.

So out came perfectly ripe fruit from the fridge….fresh strawberries, golden-red soft enough peach and half a banana.

I cut up enough fruit to satisfy and poured unsweetened soy milk over the wonderful ripeness. The amount didn’t feel quite enough so grabbed about 3/4 cup of various grains bran cereal and poured that in the bowl.

As I was chewing, the thought came…”Not enough protein.”… so I tore off half a chocolate brownie Quest protein bar – giving me another 10 grams of protein. The meal was perfect. Only a bowl, spool and fruit cutting knife were left to wash.

A couple hours later I felt a twinge of hunger & grabbed ounce and a half or so of homemade walnut mixed nut mix I keep handy for Omega 3 snacking.


It was a perfect Summer Comfort food day – enough for nourishment, sustenance and keeping cool. WF!
