Continuing November’s liking for food….today we celebrate Squash in all its Fall vibrancy.
Squash comes in Summer and Winter varieties, is relatively inexpensive and nourishes our body, skin and eyes with Vitamins A, B6, and C, folate, magnesium, fiber, riboflavin, phosphorus, and potassium.
Genus name cucurbita, squash can be cooked any number of ways. A couple weekends ago I was treated to barbecued squash and zucchini, which equaled any previous servings of similar vegetables in mouth-watering taste and texture.
Our take away from today’s post is how nature takes care of us in the most common, ubiquitous (found everywhere) foods.
Today let’s be like squash, mixed in with zucchini and Brussel sprouts, as in our Roasted Vegetables picture above – welcoming, warm in outreach, hearty and good for the soul. WF!
