The Vernal Equinox – Spring’s advent – began March 20, 2022. Our days now start to lengthen and variety lettuces and intense flavor greens, such as arugula, come into season.
Spring gives us permission to Eat More Greens, to Focus on the Nutrient Density contained within plant foods.
I first became aware of the phrase Nutrient Density through writings and PBS fundraising programs, which feature Dr. Joel Fuhrman.
Dr. Fuhrman defines Nutrient Density with the formula H = N/C. Or….Health = Nutrients divided by Calories.
Nutrients are found in non-caloric food factors such as vitamins, minerals, fibers and phytochemicals which are chemical compounds occurring naturally in plants.
So as not to spoil your own dietary research, here are three of Dr. Fuhrman’s most well-known books: Eat To Live, The End of Dieting and Eat For Life: The Breakthrough Nutrient-Rich Program for Longevity, Disease Reversal and Sustained Weight Loss.
My personal experience is a 40 lb weight loss when practicing Nutrient Density eating.
In order to prevent age-related sarcopenia (muscle loss) I add more protein than the nutrient density approach advocates for individuals under age fifty.
A line in the sand sentence from The End of Dieting states “A diet can only be considered successful if the food you eat supports longevity and protects you against heart disease, stroke, dementia and cancer.”
A dear friend of mine suffered a massive stroke last week. Dementia, cancer and obesity stalk my family.
The food we eat is no joke.
May each of is, if we are able, in our little corner of the world, introduce the full variety of nutrient-rich vegetables, beans, lentils, nuts, seeds, berries and fresh fruit into our diet.
