ONE, PLEASE

Many of us dine alone a majority of our days.
The issue becomes eating nutritionally when we do not want excess left overs or to create a food preparation kitchen mess.

Here is my favorite Lean and Green solution for solo meals.

1. I keep on hand a variety of Healthy Choice Power Bowls or Zero sugar low carb frozen dinners for one which can be found in most grocery store freezers.

While microwaving the frozen dinner, I stove-top cook, or maybe also micro-wave frozen broccoli, brussel sprouts or other green vegetables, which always are on hand in my freezer for adding to the Healthy Choice option. These are added to the now-hot frozen dinner which has been moved to a mid-size bowl.

Then extra protein goes in. Maybe it’s non-fat greek unsweetened yogurt, a couple cooked egg whites, or frozen, cooked chicken breast strips, which I micro-waved and did a quick pan sauté with seasoning.

Finally, I slice a tomato into the bowl and maybe add cilantro or parsley for a bright green pop.

Dinner is ready. Enough food has been created for two meals that fed me well and did not create a mess! WF!
